Thesis title: “Angiotensin I-converting enzyme (ACE) inhibitory peptides and antioxidant peptides
originated from fish protein hydrolysates”
My PhD project consist on 3 steps: in silico analysis, in vitro hydrolysis and ex vivo digestion of carp
and salmon muscle proteins, determination of antioxidant acivity and ACE inhibitory activity of
obtained hydrolysates and identification of bioactive peptides.
